Everyone loves a good old fry up, but this is one with a twist.
It’s a little on the healthier side but if you’re looking for a big breakfast on a saturday morning then this is the real deal!
Or maybe perfect for a Mother’s Day breakfast?
All you need is:
To start with you wana make, what they call in america, ‘home fries’. They are usually just cubed potatoes cooked in herbs – effectively like chips. But try them with sweet potato.
Skin your sweet potato and then cut into bitesize chunks.
They are effectively like small wedges. Cover them in some olive oil and season.
They will need around 20 minutes in the oven on about 200 degrees.
Now chop your peppers and chorizo and put them in separate frying pans.
Chorizo never takes that long to cook so watch it.
Whilst they are all cooking, chop your avocado and tomatoes and leave them to one side.
Crack your eggs and start frying them in a pan.
Finally take everything off the heat and start to plate up. Sweet potato, chorizo and peppers and then eggs on top.
Sprinkle your avocado and tomatoes over the top and you’re done!
